This recipe is from FoodFood TV channel By Sanjeev Kapoor 30 Nov 2014 in Recipes Course New Update Main Ingredients Mutton On Bone, Dried Red Chillies Cuisine Maharashtrian Course Main Course Mutton Prep Time 11-15 minutes Cook time 26-30 minutes Serve 4 Taste Spicy Level of Cooking Moderate Others Non Veg Advertisment Ingredients list for Saoji Mutton 800 grams Mutton On Bone 2 inch pieces on the bone Dried Red Chillies 8 tablespoons Oil 2 tablespoons Coriander seeds 1 teaspoon Caraway seeds (shahi jeera) 4-5 Black cardamoms 3-4 Green cardamoms 4-6 Cloves 1 tablespoon Black peppercorns 1 1/2 inch piece Cinnamon 1 Bay leaf 1 tablespoon Poppy seeds (khuskhus/posto) 3-4 medium Onions sliced 8-10 slices Dried coconut ( khopra) 1 tablespoon Stone flower (dagad phool) 7-8 Dried red chillies 1 tablespoon Ginger paste 1 tablespoon Garlic paste to taste Salt Method Advertisment Heat 5 tbsps oil in a non stick pan. Add coriander seeds, shahi jeera, black cardamoms, green cardamoms, cloves, black peppercorns, cinnamon, bay leaf, poppy seeds, onions, dried coconut slices and stone flower. Mix and sauté till fragrant. Heat remaining oil in pressure cooker. Add dried red chillies to spice mixture and sauté for 3-4 minutes more. Add mutton to pressure cooker and sauté till well browned. Remove spice mixture from heat and cool. Transfer into a grinder jar and grind into a paste 2-3 tbsps water. Add ginger paste, garlic paste and salt to mutton. Mix well and cook for 3-4 minutes. Add ground paste, mix well. Adjust salt and add 1 cup water. Cover and cook till 6-8 whistles. Open the lid of the cooker when the pressure reduces completely and serve hot.
