Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Raw Papaya Chutney Recipe

  • Raw Papaya peeled and grated 2 cups

  • Raisins 1/2 teaspoon

  • Oil 1 1/2 tablespoons

  • Asafoetida a pinch

  • Cumin seeds 1/2 teaspoon

  • Ginger finely chopped 1 tablespoon

  • Green chillies finely chopped 2

  • Raisins 3 tablespoons

  • Sugar 1 1/2 cups

  • Red chilli powder 1 teaspoon

  • Black salt 1/2 teaspoon

  • Saffron a few strands

  • Salt to taste

  • Juice of ½ lemon

Method

Step 1

Heat 2 cups water in a non-stick pan, add raw papaya and cook for 3-4 minutes or till papaya becomes soft. Strain papaya into a bowl and set aside.

Step 2

Heat oil in another non-stick pan, add mustard seeds and when they splutter add asafoetida and cumin seeds. Sauté till fragrant.

Step 3

Add ginger, green chillies and raisins and saute for 2-3 minutes.

Step 4

Add papaya and sauté for 1-2 minutes. Add sugar and cook for 1-2 minutes.

Step 5

Add red chilli powder, black salt, saffron, salt and lemon juice and mix well. Cook for 6-8 minutes.

Step 6

Transfer into a serving bowl and serve.
