Ingredients list for Raw Papaya Chutney
- 2 cups Raw Papaya peeled and grated
- 1/2 teaspoon Raisins
- 1 1/2 tablespoons Oil
- a pinch Asafoetida
- 1/2 teaspoon Cumin seeds
- 1 tablespoon Ginger finely chopped
- 2 Green chillies finely chopped
- 3 tablespoons Raisins
- 1 1/2 cups Sugar
- 1 teaspoon Red chilli powder
- 1/2 teaspoon Black salt
- Saffron a few strands
- to taste Salt
- Juice of ½ lemon
Method
- Heat 2 cups water in a non-stick pan, add raw papaya and cook for 3-4 minutes or till papaya becomes soft. Strain papaya into a bowl and set aside.
- Heat oil in another non-stick pan, add mustard seeds and when they splutter add asafoetida and cumin seeds. Sauté till fragrant.
- Add ginger, green chillies and raisins and saute for 2-3 minutes.
- Add papaya and sauté for 1-2 minutes. Add sugar and cook for 1-2 minutes.
- Add red chilli powder, black salt, saffron, salt and lemon juice and mix well. Cook for 6-8 minutes.
- Transfer into a serving bowl and serve.
