Ingredients list for Raw Mango Rice-Cook Smart
- 3 tablespoons Raw mango peeled and grated
- 3 cups Basmati rice cooked
- 2 tablespoons Oil
- 3 Green chillies
- 1 teaspoon Mustard seeds
- 1 tablespoon Split Bengal gram (chana dal)
- 1 tablespoon Split skinless black gram (dhuli urad dal)
- 4-5 Fresh coriander sprigs
- 1/4 teaspoon Turmeric powder
- 10-15 Curry leaves
- to taste Salt
- 1 tablespoon Sugar
- for garnish Raw mango slices
Method
- Heat oil in a non-stick wok.
- Finely chop green chillies.
- Add mustard seeds to the hot oil and let them splutter. Add Bengal gram and black gram and sauté they turn a light brown.
- Take the rice in a large pan. Finely chop the coriander sprigs.
- Once the grams brown add turmeric powder and mix. Add curry leaves and green chillies and mix and sauté till the leaves crackle.
- Add raw mango and mix and sauté for a couple of minutes. Add salt and sugar and mix. Add coriander leaves and mix.
- Add this mixture to the rice and mix gently.
- Garnish with mango slices and serve at room temperature.
