Ingredients
- 18-20 medium prawns, cleaned, deveined and washed
- 4 eggs
- Salt to taste
- 2 tablespoons oil
- 2-3 green chillies, chopped
- 1 medium onion, chopped
- 1 medium tomato, chopped
- ½ teaspoon turmeric powder
- 1 teaspoon red chilli powder
- 6-7 button mushrooms, chopped
- 3-4 tablespoons chopped coriander leaves
- 3-4 tablespoons grated processed cheese
- Toasted bread slices to serve
Method
- In a bowl, break eggs, add salt, and whisk well with a fork.
- Heat 1 tablespoon oil in a non-stick pan, green chillies, onion and tomato. Cook for 1-2 minutes, mixing occasionally.
- Add salt, turmeric powder, red chilli powder, mix well. Add prawns and sauté for 1 minute.
- Add mushrooms, mix well and cook for 1 minute. Add the eggs and coriander leaves, and cheese. Cover and cook for 2-3 minutes.
- Loosen the edges and fold the omelette in half, slide onto a serving plate.
- Serve hot along with toasted bread slices.
