Ingredients list for Prawn Fritters On Sugarcane Sticks

  • 1 1/2 cups Small prawns
  • 2 Sugarcane sticks
  • 1 medium Onion finely chopped
  • 1 teaspoon Green chilli finely chopped
  • 2 tablespoons Fresh coriander leaves finely chopped
  • 1 Spring onion chopped
  • to taste Salt
  • to taste Crushed black peppercorns
  • 1/2 tablespoon Lemon juice
  • 2 Sugarcane sticks
  • 6 Bread slices
  • 1 Egg
  • to deep fry Olive oil


In a bowl mix together prawns, onion, green chilli, spring onion, coriander leaves, salt and crushed black peppercorns. Add lemon juice and mix well. Coarsely grind this mixture and transfer into a bowl.

Scrape the sugarcane and cut into thin long strips. Remove the sides of the bread and grind into crumbs. Whisk egg in a bowl. Add 1 tbsp water and whisk well to make egg wash.

Heat sufficient oil in a deep pan. Dampen your hands, take small portions of prawn mixture and pat it around a sugarcane stick and shape them like lollipops. Dip them in the egg wash and coat with bread pieces. Deep fry in hot oil till golden brown.

Drain on absorbent paper.

Serve hot with tomato sauce.
