Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Prawn Baingan Masala Recipe

  • Prawns shelled and deveined 500 grams

  • Brinjals roasted and peeled 1 medium

  • Oil 2 tablespoons

  • Onion seeds (kalonji) 1 teaspoon

  • Green chillies finely chopped 4

  • Ginger finely chopped 1 tablespoon

  • Garlic finely chopped 1 tablespoon

  • Onions 2 medium

  • Red tomatoes 2 medium

  • Red chilli powder 1 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Salt to taste

  • Bhuna masala 100 grams

  • fresh coriander leaves + a fresh coriander sprig finely chopped 2 tablespoons


Step 1

Heat oil in a non-stick pan. Add onion seeds, green chillies, ginger, garlic and sauté for half a minute.

Step 2

Finely chop onions, add to the pan and sauté for 3-4 minutes.

Step 3

Finely chop roasted brinjal and tomatoes. Add tomatoes to the pan and mix well.

Step 4

Add red chilli powder, turmeric powder and salt and mix well. Sauté for 4-5 minutes.

Step 5

Add bhuna masala, mix well and sauté for 2-3 minutes.

Step 6

Add prawns, mix well and cook for 2-3 minutes.

Step 7

Add brinjal, coriander leaves, mix well and cook for 1-2 minutes.

Step 8

Transfer into a serving bowl, garnish with a fresh coriander sprig and serve hot.
