Ingredients list for Prawn Baingan Masala
- 500 grams Prawns shelled and deveined
- 1 medium Brinjals roasted and peeled
- 2 tablespoons Oil
- 1 teaspoon Onion seeds (kalonji)
- 4 Green chillies finely chopped
- 1 tablespoon Ginger finely chopped
- 1 tablespoon Garlic finely chopped
- 2 medium Onions
- 2 medium Red tomatoes
- 1 teaspoon Red chilli powder
- 1/4 teaspoon Turmeric powder
- to taste Salt
- 100 grams Bhuna masala
- 2 tablespoons fresh coriander leaves + a fresh coriander sprig finely chopped
Method
- Heat oil in a non-stick pan. Add onion seeds, green chillies, ginger, garlic and sauté for half a minute.
- Finely chop onions, add to the pan and sauté for 3-4 minutes.
- Finely chop roasted brinjal and tomatoes. Add tomatoes to the pan and mix well.
- Add red chilli powder, turmeric powder and salt and mix well. Sauté for 4-5 minutes.
- Add bhuna masala, mix well and sauté for 2-3 minutes.
- Add prawns, mix well and cook for 2-3 minutes.
- Add brinjal, coriander leaves, mix well and cook for 1-2 minutes.
- Transfer into a serving bowl, garnish with a fresh coriander sprig and serve hot.
