Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Poha Croquettes-SK Khazana Recipe

  • Pressed rice (poh) 1 1/2 cups

  • Medium potatoes boiled, peeled and grated 2

  • Medium onion finely chopped 1

  • Green peas blanched 1/2 cup

  • Curry leaves shredded 1 teaspoon

  • Green chillies finely chopped 2

  • Mustard seeds 1 teaspoon

  • Fresh coriander leaves finely chopped 1 tablespoon

  • Red chilli powder 1/2 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Salt to taste

  • Refined flour (maida) slurry as required

  • Dried breadcrumbs for coating

  • Oil to deep fry


Step 1

Soak pressed rice in some water and drain.

Step 2

Mix together potatoes, onion, green peas, curry leaves, green chillies, mustard seeds, coriander leaves, chilli powder, turmeric powder, salt and pressed rice in a bowl.

Step 3

Divide the mixture into equal portions and shape into croquettes.

Step 4

Heat sufficient oil in a kadai. Deep-fry croquettes till golden brown. Drain on absorbent paper.

Step 5

Serve hot with green chutney.
