Piquant Potatoes In Jackets

Potatoes cooked with onion, ginger , garlic and basic Indian spices ,stuffed with this mixture and served. This is a Sanjeev Kapoor exclusive recipe.

Ingredients

  • 4 large potatoes
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1 small onion, chopped
  • 1 inch ginger piece, chopped
  • 3-4 garlic cloves, chopped
  • 1/2 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • 1/2 teaspoon black pepper powder
  • 8 tablespoons yogurt
  • 1 tablespoon chopped fresh coriander leaves 

Method

  1. Preheat oven to 190°C. Wash and prick potatoes with a fork. Bake in a preheated oven at 190°C for forty minutes or till done.
  2. Cut potatoes in half and scoop out flesh without spoiling the skin. Skin of the potato is popularly known as the jacket. Heat oil in a pan.
  3. Add cumin seeds, onion, ginger and garlic. Sauté for a minute. Add scooped potatoes, turmeric powder, coriander powder, black pepper powder and garlic salt. Cook further on medium heat for two minutes, stirring occasionally.
  4. Adjust seasoning. Spoon mixture back into potato jackets and top each with a tablespoonful of yogurt. Garnish with coriander leaves and serve hot.
