Ingredients list for Peanut Chicken
- 400 grams Boneless chicken , cubed
- 1 tablespoon Smooth peanut butter
- 2 medium Onions
- 2 tablespoons Oil
- 10-15 Curry leaves
- 5-6 cloves Garlic
- 1/4 teaspoon Turmeric powder
- 1/2 teaspoon Cumin powder
- 3/4 teaspoon Red chilli powder
- 2-3 Green chillies , slit
- 1 cup Coconut milk
- 2 medium Tomatoes
- to taste Salt
Method
- Quarter onions and chop them in a chopper.
- Heat oil in a non-stick pan, add curry leaves and onions, mix and saute till onions soften.
- Crush garlic cloves into the pan, mix and saute for 1 minute. Add 2 tbsps water so that the mixture does not burn. Continue to saute till onions are lightly browned.
- Add chicken and mix. Add turmeric powder, cumin powder, red chilli powder and green chillies, mix well and saute for 2-3 minutes.
- Add peanut butter and coconut milk and mix well and cook for 2-3 minutes.
- Cut each tomato into 12 pieces and add to the pan. Add salt, mix well and cook till tomatoes soften and chicken gets cooked.
- Transfer into a serving bowl and serve hot.
