Ingredients list for Peanut Butter Noodles
- 2 tablespoons Peanut butter
- 200 grams Noodles parboiled
- 7-8 Spring onions with greens
- 1 inch piece Ginger
- 6-7 cloves Garlic
- 2 Fresh red chillies
- 1 tablespoon Oil
- 1/4 cup Dark soy sauce
- 1/2 cup Green capsicum
- 2 tablespoons Brown sugar
- 1 tablespoon Vinegar
- 1/2 cup Bean sprouts
- 1/4 cup Roasted peanuts
Method
- Slice spring onion bulbs. Chop ginger, garlic, fresh red chillies in a chopper. Heat oil a non-stick wok, add spring onions and sauté for ½ minute.
- Add ginger-garlic-red chillies and sauté for ½ minute. Add dark soy sauce and ¼ cup water and stir. Cut capsicum into thin strips. Add peanut butter and ¼ cup more water to the wok and stir to blend well. Add brown sugar and vinegar and mix. Add noodles and capsicum and mix.
- Chop spring onion greens and add along with bean sprouts. Toss and mix well. Add roasted peanuts and mix. Serve hot.
