Ingredients list for Paneer Vegetable Burger

  • 4 Burger buns
  • 3/4 cup Cottage cheese (paneer) , grated
  • 1/2 cup Raw bananas , boiled, peeled and grated
  • 1/4 cup Green peas , boiled
  • 1/4 teaspoon Turmeric powder
  • 1 teaspoon Red chilli powder
  • 1/2 teaspoon Garam masala powder
  • to taste Salt
  • 1 tablespoon Fresh coriander leaves , chopped
  • 3 tbsps + for coating Fresh breadcrumbs
  • to shallow fry Oil
  • 2 tablespoons Eggless mayonnaise
  • 1 teaspoon Mustard paste
  • to taste Black peppercorns , crushed
  • 2 tablespoons Mixed capsicums (red, yellow and green) , finely chopped
  • 2 tablespoons Purple cabbage , chopped
  • as required Butter
  • a few Iceberg lettuce leaves
  • 8 Tomato roundels
  • 4 Cheese slices

Method

  1. To prepare tikkis, take raw banana in a mixing bowl, add cottage cheese and green peas and mix well. Add turmeric powder, red chilli powder, garam masala powder, salt, coriander leaves and breadcrumbs and mix well.
  2. Divide the mixture into equal portions and shape each into a tikki.
  3. Spread some breadcrumbs on a plate and roll each tikki in it till they are well coated.
  4. Heat sufficient oil in a non-stick pan, place the tikkis in it and shallow-fry on low heat.
  5. While the tikkis are cooking, prepare mayonnaise spread. Take eggless mayonnaise in another bowl, add mustard paste, crushed peppercorns, mixed capsicums and purple cabbage and mix well.
  6. Halve the burger buns horizontally.
  7. When the tikkis turn golden on the underside, flip them and cook the other side similarly. Drain them on absorbent paper.
  8. Heat a non-stick tawa.
  9. Apply some butter on the cut side of each burger half, place on hot tawa with butter side downwards and toast till golden brown. Flip and toast till golden brown. Transfer on the worktop.
  10. To prepare each burger, spread some mayonnaise mixture on the base half of the buns. Place few torn lettuce leaves, one tikki, 2 tomato roundels and top with some mayonnaise mixture. Place a cheese slice on top and cover with the top half. Secure with a long toothpick.
  11. Keep each burger on individual serving plate and serve immediately.
