Ingredients list for Palak Sprouts

  • 1 medium bunch Spinach blanched
  • 1 cup Mixed Sprouts
  • 3 tablespoons Oil
  • 1 Medium onion finely chopped
  • 1 tablespoon Garlic finely chopped
  • 2 Medium tomatoes finely chopped
  • to taste Salt
  • 1 teaspoon Garam masala powder
  • 1/4 cup Fresh cream
  • 1 tablespoon Ginger-garlic paste
  • 1/4 teaspoon Turmeric powder
  • 1 tablespoon Chana masala powder
  • 1 teaspoon Red chilli powder
  • 1/2 inch Ginger
  • 3/4 tablespoon Lemon juice

Method

  1. Heat 2 tbsps oil in a deep non-stick wok and 1 tbsp oil in a non-stick pan.
  2. Roughly chop onion and add to the pan and sauté well.
  3. Add garlic to the wok and sauté till golden.
  4. Place spinach leaves in a grinder jar and grind to a coarse paste. Add this paste to the garlic in the wok. Add ¼ cup water and mix well.
  5. When the onion in the pan becomes soft, add tomato and mix well.
  6. Add salt and garam masala powder to the spinach and mix well and saute for 2 minutes. Add cream and mix well
  7. Add ginger-garlic paste and mixed sprouts to onion-tomato mixture. Add ½ cup water, salt, turmeric powder, chana masala powder and red chilli powder and mix well. Cover and cook till the sprouts are done.
  8. Cut ginger into strips and place in a bowl. Add salt and lemon juice mix well.
  9. Make a bed of spinach mixture in a serving bowl, top with cooked sprouts, garnish with ginger strips and pour the lemon juice over the sprouts. Serve immediately.
