Orange and Broken Wheat Salad

This refreshing salad combines juicy orange segments with tender broken wheat (dalia) and a vibrant mix of spring onions, parsley, mint, and tomato. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 2 medium oranges, peeled, segments separated and seeded
  • 4 tablespoons broken wheat (dalia/lapsi) soaked for 15 minutes and drained
  • 4 spring onions ,chopped
  • 1 cup chopped fresh parsley 
  • 1 tablespoons chopped fresh mint leaves 
  • 1 medium tomato, seeded and cut into small pieces
  • 1 tablespoon lemon juice
  • Salt to taste
  • 1 teaspoon sugar
  • 1/4 teaspoon black pepper powder
  • 2 teaspoons extra virgin olive oil
  • 1 tablespoon black sesame seeds (kale til) toasted

Method

  1. Place the drained broken wheat in a deep bowl. Add the chopped spring onion bulbs and mix, crushing the onions slightly with your fingers.
  2. Add the chopped parsley and mix well.
  3. Add the chopped spring onion greens and mint leaves. Add tomato pieces to the salad. Add the orange segments and toss well.
  4. To make the dressing, mix together the lemon juice, salt, sugar and pepper powder. Pour over the salad and mix well. Drizzle the extra virgin olive oil and toss.
  5. Chill and serve garnished with the toasted black sesame seeds.
