Ingredients
- 2 medium oranges, peeled, segments separated and seeded
- 4 tablespoons broken wheat (dalia/lapsi) soaked for 15 minutes and drained
- 4 spring onions ,chopped
- 1 cup chopped fresh parsley
- 1 tablespoons chopped fresh mint leaves
- 1 medium tomato, seeded and cut into small pieces
- 1 tablespoon lemon juice
- Salt to taste
- 1 teaspoon sugar
- 1/4 teaspoon black pepper powder
- 2 teaspoons extra virgin olive oil
- 1 tablespoon black sesame seeds (kale til) toasted
Method
- Place the drained broken wheat in a deep bowl. Add the chopped spring onion bulbs and mix, crushing the onions slightly with your fingers.
- Add the chopped parsley and mix well.
- Add the chopped spring onion greens and mint leaves. Add tomato pieces to the salad. Add the orange segments and toss well.
- To make the dressing, mix together the lemon juice, salt, sugar and pepper powder. Pour over the salad and mix well. Drizzle the extra virgin olive oil and toss.
- Chill and serve garnished with the toasted black sesame seeds.
