Ingredients
- 1 cup broken wheat (jada dalia)
- 2 tablespoons ghee
- ½ teaspoon cumin seeds
- 3 cloves
- 5-6 black peppercorns
- 2 green cardamoms
- 1 bay leaf
- 1 large onion, sliced
- ½ teaspoon turmeric powder
- Salt to taste
- 1 small carrot, cut into small diamonds
- 10-12 cauliflower florets
- 3-4 french beans, diagonally cut into 1 inch pieces
- ¼ cup green peas
- Fresh coriander sprig for garnish
- Raita to serve
Method
- Heat ghee in a pressure cooker, add cumin seeds, cloves, black peppercorns, green cardamoms and bay leaf and cook till fragrant.
- Add onion and sauté for 1-2 minutes. Add broken wheat and sauté for 5-6 minutes on medium heat.
- Add turmeric powder, salt, carrot, cauliflower, French beans and green peas and mix well. Add 2½ cups hot water and mix well. Cover and cook under pressure till 4-5 whistles are released.
- Open the lid of the cooker once the pressure reduces completely. Transfer onto a serving plate and garnish with fresh coriander sprig.
Serve hot with raita.
