Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Onion-Tomato Masala Recipe

  • Onions 4 large

  • Tomatoes chopped 2 large

  • Fresh tomato puree 1 cup

  • Oil 3 tablespoons

  • Cumin seeds 1/2 teaspoon

  • Garlic paste 1 teaspoon

  • Ginger paste 1 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Salt to taste

  • Red chilli powder 1 teaspoon

  • Coriander powder 1 1/2 teaspoons

  • Garam masala powder 1 teaspoon

Method

Step 1

Heat oil in a pan. Add cumin seeds and when they begin to change colour add onions and sauté till well browned.

Step 2

Add garlic paste and ginger paste and continue sautéing. Add turmeric powder and mix. Add tomatoes and stir. Add fresh tomato puree and salt.

Step 3

Mix and add red chilli powder, coriander powder, garam masala powder and sauté till oil begins to separate.

Step 4

Use or cool and store frozen.
