Ingredients list for Mumbai Toast Sandwich - SK Khazana

  • White bread slices
  • 3 Potatoes medium, boiled, peeled and mashed
  • 1 tablespoon Oil
  • 1 tablespoon Ginger-garlic-green chilli paste
  • 1/4 teaspoon Turmeric powder
  • Salt to taste
  • 2 tablespoons Coriander leaves freshly chopped
  • Butter as required
  • Green chutney as required
  • 1/2 Cabbage small, finely shredded
  • 1 Green capsicum medium, cut into thin strips
  • Chaat masala for sprinkling
  • 1 Tomato large, cut into roundels
  • 1 Onion large, cut into roundels

Method

  1. To make potato bhaji, heat oil in a non-stick pan. Add ginger-garlic-green chilli paste and sauté for 30 seconds. Add turmeric powder, mix and sauté for 30 seconds.
  2. Add potatoes and mix. Add salt, coriander leaves and sprinkle some water, mix and saute for 1-2 minutes, mashing lightly. Transfer into a bowl and let it cool down.
  3. To prepare one sandwich, apply some butter and green chutney on one side of 2 bread slices.
  4. Put some cabbage and capsicum strips on one slice and sprinkle some chaat masala on the chutney side of one bread slice. Top it with some potato bhaji, onion rings, 1 tomato roundel and sprinkle some more chaat masala on top. Cover with the bread slice with chutney side facing downwards.
  5. Grease a non-stick sandwich toaster with some butter, place the sandwich in it, cover and place it on medium heat. Toast turning side still both sides are evenly golden. Remove from the toaster and apply some butter on top. Make more sandwiches similarly.
  6. Cut into 2 equal triangles and place on a serving plate and serve hot with some green chutney.
