By Sanjeev Kapoor 27 Apr 2016 in Recipes Non Veg New Update Main Ingredients Chicken, Chickpeas Cuisine Moroccan Course Main Course Chicken Prep Time 11-15 minutes Cook time 31-40 minutes Serve 4 Taste Spicy Level of Cooking Moderate Others Non Veg Ingredients list for Moroccan Chicken 600 grams Chicken cut into 8 pieces 1/2 cup Chickpeas soaked and boiled 3 tablespoons Olive oil 1 tablespoon Butter 2 medium Onions 1 inch piece Ginger 6-8 cloves Garlic crushed 3 medium Carrots 1/2 inch cubes 1/2 teaspoon Coriander powder 1/2 teaspoon Cumin powder 1/2 teaspoon Red chilli powder to taste Salt 2 teaspoons Lemon rind grated 75 grams Dried apricots chopped 1 large Zucchini 1/2 inch pieces 1 large Red capsicum seeded and sliced 2 medium Tomatoes seeded and chopped a few strands Saffron (kesar) Method Clean cut the chicken and all vegetables. Heat olive oil in a pan. Add a little butter. Add onions, ginger and garlic and sauté for two minutes. Add chicken and sauté on high heat for two to three minutes. Add carrots and mix. Add coriander powder, cumin powder, red chilli powder, salt and grated lemon rind and mix. Add one cup of water, cover and cook for three to four minutes. Add apricots and mix. Cover and continue to cook for a minute. Add zucchini, red capsicum and mix. Cover and cook. When the chicken is almost done add tomatoes, saffron and mix. Cover and cook till done. Add boiled chickpeas and mix. Cover and cook for two to three minutes. Adjust salt and stir. Serve hot with couscous or with rice.
