The Bengalis are great food lovers and take pride in their cuisine.  In fact so obsessed are they about food, that the man of the house goes to the market daily to buy a fresh supply vegetables and fish which is a must in their daily menu.  The medium of cooking is mustard oil which adds its own pungency.  Another very important item of Bengali cuisine is the variety of sweets or mishti as they call them.  Most of them are milk based and are prepared from chhena.
A meal, for the Bengali, is a ritual in itself.  Bengalis spend not only the great deal of time thinking about the food but also on its preparation and eating.

Ingredients for Mochar Chingri - Cook Smart Recipe

  • Medium banana flower (mocha) outer leaves removed, stalks separated, stigma rem 1

  • Medium prawns (chingri) shelled and deveined 12-16

  • Salt to taste

  • Turmeric powder 1/2 teaspoon

  • Oil 2 tablespoons

  • Dried red chillies 2

  • Cumin seeds 1 teaspoon

  • Cumin powder 1 teaspoon

  • Red chilli powder 1 1/2 teaspoons

  • Garlic powder 1 teaspoon

  • Ginger paste 1 teaspoon

  • Tata Sampann Garam Masala Powder 3/4 teaspoon

  • Fresh coriander sprig floret

Method

Step 1

Chop banana flower stalks.

Step 2

Put prawns in a bowl. Add salt and ¼ teaspoon turmeric powder, mix and set aside to marinate.

Step 3

Heat 1 tablespoon oil in a non-stick pan, add prawns and sauté for 2-3 minutes.

Step 4

Heat 3-4 cups water in a deep non-stick pan, add banana flower stalks and salt, mix and cook for 6-8 minutes.

Step 5

Break red chillies into small pieces.

Step 6

Transfer the prawns into another bowl.

Step 7

Heat remaining oil in the same pan, add red chilli pieces and cumin seeds, mix and sauté till the seeds colour changes.

Step 8

Strain banana flower, add to the pan along with remaining turmeric powder, cumin powder, chilli powder, garlic paste, ginger paste, salt and mix well.

Step 9

Add sautéed prawns and mix well. Add Tata Sampann Garam Masala Powder, mix well and cook for 5 minutes.

Step 10

Place a banana flower leaf in a serving bowl and put the mochar chingri on it. Garnish with coriander sprig and serve hot.
