How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Mixed Vegetable Palak Tahiri Recipe

  • Rice soaked 1 1/2 cups

  • Cauliflower florets 8-10

  • Carrot cut into small cubes 1 medium

  • Potatoes cut into small cubes 2 medium

  • French beans 6-8

  • Shelled green peas 1/4 cup

  • Spinach puree 1/2 cup

  • Bhuna masala 130 grams

  • Black peppercorns 8-10

  • Fennel seeds (saunf) 1/2 teaspoon

  • Cinnamon 1 inch stick

  • Green chillies slit 4-5

  • Garam masala powder 1/4 teaspoon

  • Yogurt 1/2 cup


Step 1

Heat a rice cooker. Put the bhuna masala in it along with black peppercorns, fennel seeds, cinnamon and saute till fragrant.

Step 2

Add cauliflower, carrot, potatoes, French beans and green chillies and mix.

Step 3

Add rice, green peas, 2 cups water, spinach puree, garam masala powder and yogurt and mix well.

Step 4

Cover the cooker and cook on cook mode till the rice is done. Serve hot.
