Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Masoor Suva Dal Recipe

  • Red Lentils soaked for 15 minutes and drained 1 cup

  • Dill Leaves finely chopped 2 tablespoons

  • Turmeric powder 1/4 teaspoon

  • Salt to taste

  • Oil 1 teaspoon

  • Cumin seeds 1/4 teaspoon

  • Curry leaves 3-4

  • Garlic chopped 2 teaspoons

  • Green chillies chopped 1/2 teaspoon

  • Onions finely chopped 1/4 cup

Method

Step 1

Place red lentils in a pressure cooker, add turmeric powder, salt and one and a half cups of hot water and pressure cook till two whistles are given out. Open the lid when the pressure reduces completely and whisk well.

Step 2

Heat oil in a deep non-stick pan, add cumin seeds and let them change colour. Add curry leaves, garlic, green chillies and onions and sauté till the onions are lightly browned.

Step 3

Add the cooked lentil and one cup of water, mix and bring the mixture to a boil. Add dill leaves, mix well and simmer for five to seven minutes. Serve hot.
