Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Masala Cheese Toast Recipe

  • White bread slices 8

  • Processed cheese , grated as required

  • Potatoes , boiled and peeled 2 large

  • Oil 1 tablespoon

  • Green chillies , finely chopped 1-2

  • Curry leaves 5-6

  • Turmeric powder 1/4 teaspoon

  • Salt to taste

  • Fresh coriander leaves , chopped 2 teaspoons

  • Butter as required

  • Green chutney spreading to serve

  • Tomato ketchup to serve

Method

Step 1

Heat oil in a non-stick pan, add green chillies, chop curry leaves into the pan, mix and saute for 1 minute.

Step 2

Add turmeric powder and grate the potatoes into the pan and mix well. Add salt, mix and cook for 1-2 minutes. Add coriander leaves and mix well. Transfer into a bowl and cool.

Step 3

Apply some butter on one side of all thebread slices and spread some green chutney over 4 slices.

Step 4

Spread some potato mixture and processed cheese on the buttered side of the remaining 4 bread slices and cover with the other bread slices with chutney side facing downwards.

Step 5

Heat a non-stick tawa.

Step 6

Apply some butter on top of sandwiches, place them buttered side downwards on the hot tawa and toast till underside turns golden brown. Apply some butter on the other side, flip and toast till golden brown on the other side too.

Step 7

Cut into triangles, arrange them on a serving platter and serve hot with tomato ketchup and green chutney.
