Ingredients list for MBPS pulao
- 3 cups Cooked basmati rice
- 1 1/2 cups Mushrooms quartered
- 1 cup Paneer (cottage cheese) cubed fried
- 1/2 cup Green peas boiled
- 1/2 cup Spinach leaves (palak) chopped
- 6 Cloves
- 6 Green cardamoms
- 2 inch stick Cinnamon
- 2 tablespoons Fennel seeds (saunf)
- 4 tablespoons Ghee
- 2 Bay leaves
- 3 medium Onions chopped
- 1/2 cup Spring onion greens chopped
- 3 tablespoons Ginger-garlic paste
- 3 Green chillies chopped
- to taste Salt
- 1/2 cup Coconut milk
- for garnish coriander leaves
Method
- In a blender; blend cloves, green cardamoms, and cinnamon and fennel seeds to a fine powder. Set aside.
- Eat ghee in a non stick pan, add bay leaves, onion and sauté till pink. Add spring onions, ginger garlic paste and green chillies. Sauté for two minutes.
- Add the above spice powder and mix for two minutes. Add mushrooms and sauté for two minutes. Sprinkle two tablespoons water. Toss well.
- Add baby corn, cottage cheese, green peas, spinach leaves, rice and salt. Mix well. Add coconut milk and cook for five minutes. Garnish with coriander leaves and serve hot.
