Ingredients list for Lemon Grass Flavoured Chicken Curry

  • 600 grams Chicken Curry Cut curry cut pieces on the bone
  • Lemon Grass 1 medium bundle
  • 2 tablespoons Oil
  • 1 inch Stick Cinnamon stick
  • 1 Bay leaf
  • 2 Black cardamoms
  • 4 Green cardamoms
  • 4 Cloves
  • 1 tablespoon Ginger-garlic paste
  • 1 large Brinjal
  • 1 1/2 tablespoons Coriander powder
  • 1 teaspoon Red chilli powder
  • a pinch Turmeric powder
  • 1 teaspoon Black peppercorns
  • 1/2 teaspoon Garam masala powder
  • to taste Salt
  • 130 grams Bhuna masala

Method

  1. Heat oil in a non-stick kadai. Add cinnamon, bay leaf, black cardamoms, green cardamoms and cloves and sauté till fragrant.
  2. Add ginger-garlic paste and sauté for half a minute. Add chicken pieces and sauté for a minute.
  3. Cut brinjal into big pieces, add to the kadai and mix well. Add coriander powder, red chilli powder, turmeric powder, black peppercorns, garam masala powder and salt and mix well.
  4. Add bhuna masala, mix well and cook for 2-3 minutes.
  5. Add water till the chicken is completely soaked. Add a bundle of lemon grass and stir. Cover and cook for 15-20 minutes till the chicken is cooked.
  6. Transfer into a serving bowl and serve hot.
