Ingredients list for Lemon Coconut Rice

  • 2 cup Cooked rice
  • 2-3 teaspoon Lemon juice
  • 1 lemon
  • 1 cup Coconut milk
  • ½ cup Scraped fresh coconut
  • 2 tablespoon Oil
  • 1 teaspoon Mustard seeds
  • 10-12 Curry leaves
  • ¼ teaspoon Turmeric powder
  • to taste Salt
  • to taste Crushed black peppercorns
  • Banana leaf pieces

Method

  1. Heat 1 tbsp oil in a non-stick pan, add mustard seeds and let them splutter. Add curry leaves, turmeric powder, coconut milk, rice and salt and mix well. Cook for 5-7 minutes. Transfer this into a bowl.
  2. Add scraped coconut, lemon juice and crushed peppercorns and mix well.
  3. Slice lemon.
  4. Place some of the lemon slices at one end of each banana leaf piece, place a portion of rice over it and roll.
  5. Heat remaining oil in another non-stick pan, place the rolls on it and cook till the underside is browned, flip and cook on the other side too.
  6. Arrange the rice rolls on a serving plate and serve immediately.
