Ingredients
- 2 bunches amaranth
- 4 tablespoons oil
- 1/4 teaspoon asafoetida
- 1 tablespoon cumin seeds
- 3-4 dried red chillies, broken
- 1/4 teaspoon turmeric powder
- 1 teaspoon amchur powder
- Salt to taste
- 10-12 garlic cloves
- 1 teaspoon white sesame seeds
Method
- Remove the leaves of laal maath in a parat and wash them thoroughly.
- Heat 2 tbsps oil in a non-stick pan. Add asafoetida, cumin seeds, dried red chillies and sauté till fragrant.
- Add laal maath leaves and sauté. Cook till the laal maat is done. Add red chilli powder, turmeric powder, dried mango powder, salt and mix well.
- Heat the remaining oil in another non-stick pan, add garlic and sauté till they turn golden and crisp.
- Add white sesame seeds. Garnish laal maath with sautéed garlic and sesame seeds. Serve hot.
