Laal Saag

Red amaranth tempered with cumin seeds, dried red chillies and cooked with basic Indian spices. Serve this with hot phulkas. This recipe is from FoodFood TV channel.

Ingredients 

  • 2 bunches amaranth
  • 4 tablespoons oil
  • 1/4 teaspoon asafoetida
  • 1 tablespoon cumin seeds
  • 3-4 dried red chillies, broken
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon amchur powder
  • Salt to taste
  • 10-12 garlic cloves
  • 1 teaspoon white sesame seeds

Method

  1. Remove the leaves of laal maath in a parat and wash them thoroughly.
  2. Heat 2 tbsps oil in a non-stick pan. Add asafoetida, cumin seeds, dried red chillies and sauté till fragrant.
  3. Add laal maath leaves and sauté. Cook till the laal maat is done. Add red chilli powder, turmeric powder, dried mango powder, salt and mix well.
  4. Heat the remaining oil in another non-stick pan, add garlic and sauté till they turn golden and crisp.
  5. Add white sesame seeds. Garnish laal maath with sautéed garlic and sesame seeds. Serve hot.
