  • Boneless chicken breasts 500 grams

  • Kiwis coarsely chopped 1/2 cup

  • Brown sugar 2 teaspoons

  • Fresh mint leaves 4-5

  • Ice cubes as required

  • Vodka 60 millilitres

  • Kiwi for garinishing 4 slices

  • For Feta kiwi leather

  • Kiwis peeled 2

  • Honey 1 1/2 tablespoons

  • Feta cheese crumbled 50 grams

  • Fresh basil shredded a few sprigs

  • Fresh garlic chives blanched 4

  • For Kiwi chips

  • Kiwis thinly sliced 2

  • For Beetroot caviar

  • Beetroot juice 100 millilitres

  • Castor sugar 2 teaspoons

  • Sodium alginate 1 gram

  • Calcium lactate 5 grams

  • For Carrot film

  • Carrot juice 100 millilitres

  • Sodium alginate 1 gram

  • Calcium lactate 5 grams

  • For Mushroom foam

  • Button mushroom sliced 200 grams

  • Olive oil 1 teaspoon

  • Garlic chopped 1 teaspoon

  • Onion chopped 1 small

  • Salt to taste

  • Crushed black peppercorns to taste

  • Milk 150 millilitres

  • Butter 3 tablespoons

  • For Salsa

  • Kiwis peeled and chopped 2

  • Jalapeno slices chopped 2-3

  • Green chilli chopped 1

  • Onion chopped 1 small

  • Roasted cumin powder 1/2 teaspoon

  • A few sprigs of parsley finely chopped Lemon juice

  • Salt to taste

  • Crushed black peppercorns 1 tablespoon
