The cuisine of Kerala is very hot and spicy and offers several gastronomic opportunities. The food is generally fresh, aromatic and flavoured. Keralites are mostly fish-and-rice eating people. The land and the food are rich with coconut, though one cannot imagine Kerala food without chillies, curry leaves, mustard seeds, tamarind and asafoetida. Just a little tamarind can substitute tomatoes, but there is no real substitute for curry leaves. 
The locals put to good use whatever the land offers and the result is a marvellous cuisine that is simple yet palate tickling. 
Kerala has an abundance of jackfruits, pineapples, mangoes, custard apples and an endless variety of bananas. The unusual cuisine of Kerala brings to the fore the culinary expertise of the people of Kerala. Producing some of the tastiest foods on earth, the people of Kerala are gourmets with a difference.

Ingredients for Kaikari Ishtew Recipe

  • French Beans cut into 1/2 inch pieces 4-6

  • Coconut Powder cut into ½ inch cubes 2

  • Cauliflower separated into small florets 1 small

  • Green peas 1/2 cup

  • Potato, cut into ½ inch cubes 1

  • Oil 2 tablespoons

  • Bay leaf 1

  • Cinnamon 1 inch stick

  • Star anise 1

  • Green chillies slit 2-3

  • Ginger paste 1 teaspoon

  • Garlic paste 1 teaspoon

  • Curry leaves 8-10

  • Onion chopped 1 medium

  • Coconut powder 4 tablespoons

  • Salt to taste

  • Garam masala powder 1/2 teaspoon

Method

Step 1

Place a strainer over a microwave bowl. Put the French beans, carrots, cauliflower and green peas in it,

Step 2

pour 1 cup water over it and keep the bowl in microwave oven.Cook on HIGH for 2-3 minutes.

Step 3

Heat oil in a non-stick pan. Add bay leaf, cinnamon and star anise and sauté. Add green chillies, ginger paste, garlic paste and sauté. Add curry leaves and onion and sauté till golden.

Step 4

Remove the vegetables from the microwave. Place the potato in another microwave bowl, add ½ cup water and cook in the microwave on HIGH for 3-4 minutes.

Step 5

Remove from the microwave and set aside. Add the vegetables and potato to the onions and sauté for 1-2 minutes. Take 1 tbsp coconut milk powder in a small bowl,

Step 6

add 1½ cups water and mix. Add this to the vegetables and mix. Cover the pan and cook for 4-5 minutes. Mix 3 tbsps coconut milk with 1 cup water.

Step 7

Remove the pan from heat and add this thick milk. Keep the pan back on heat, add salt and garam masala powder and mix well. Serve hot with appam or with steamed rice.
