Kabuli Chana Palda

Boiled chickpeas tempered and cooked in yogurt based gravy with basic Indian spices. Serve this with hot steamed rice. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 3 cups boiled chickpeas (kabuli chana) 
  • 2 cups yogurt
  • 1 teaspoon cumin seeds
  • 2 tablespoons gram flour (besan)
  • 2 tablespoons oil
  • 1 teaspoon garam masala powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • Salt to taste
  • 1 teaspoon sugar
  • 2 tablespoons chopped fresh coriander leaves

Method

  1. Whisk gram flour with yogurt till smooth.
  2. Heat oil in a non-stick pan, add cumin seeds and saute till they change colour.
  3. Add the yogurt mixture, garam masala powder, turmeric powder, red chilli powder and salt and stir well.
  4. Cook till the mixture begins to thicken.
  5. Add one cup of water and stir to mix.
  6. Add chickpeas and sugar and mix well. Cook for five minutes.
  7. Garnish with coriander leaves and serve hot with rice.
