Ingredients list for Hot Garlic Sauce
- 10-12 dried red chillies , seeded and soaked for 15 minutes
- 1 tablespoon chopped garlic
- 1 tablespoon oil
- 1 teaspoon soy sauce
- Salt to taste
- Crushed black peppercorns to taste
- 2 tablespoons tomato ketchup
- 1/2 teaspoon sugar
- 1 teaspoon vinegar
- 250 grams boneless chicken , cut into 1 inch pieces
- 1 medium onion , cubed and layers separated
- 1 medium tomato , cubed
- 1 medium yellow capsicum , cubed
- Diagonally sliced spring onion greens for garnish
Method
- Drain red chillies and put into a blender jar, add a little of the water in which the chillies were soaked and blend to a fine paste.
- Heat oil in a non-stick pan, add garlic and sauté for ½ minute. Add red chilli paste, mix and saute till the oil separates.
- Add ½ cup water and mix well. Add soy sauce, salt, crushed peppercorns, tomato ketchup and sugar, mix and cook for a minute. Add vinegar and mix.
- Transfer some of the sauce into a serving bowl and set aside.
- Add chicken pieces to the sauce remaining in the pan, mix well and cook for 4-5 minutes. Add salt and toss. Add onion, tomato and yellow capsicum, mix well and cook till chicken is done.
- Remove the pan from heat, transfer into a serving bowl, garnish with spring onion springs and serve with the hot garlic sauce in the bowl.
