Grilled Veggie Sandwich

A medley of vegetables marinated, grilled and sandwiched between toasted bread slices. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Grilled Veggie Sandwich

  • 8 White bread slices toasted
  • 1 tablespo + for greasing Oil
  • to taste Crushed black peppercorns
  • to taste Salt
  • ½ teaspoon Red chilli flakes
  • 2-3 Fresh thyme sprigs
  • 8-10 Garlic cloves
  • ½ medium Yellow zucchini cut into roundels
  • ½ medium Green tomatoes cut into roundels
  • ½ medium Tomato cut into roundels
  • ½ medium Onion cut into roundels
  • ½ medium Green zucchini cut into roundels
  • 1 medium Brinjal cut into roundels
  • 2-3 tablespoons Mayonnaise
  • 1 teaspoon sriracha sauce
  • as required Iceberg lettuce leaves


  1. Preheat an electric griller.
  2. Put oil, crushed peppercorns, salt, chilli flakes, torn thyme sprigs and garlic in a bowl and mix. Add yellow zucchini, green tomato, red tomato, separated onion roundels, green zucchini and brinjal and mix well.
  3. Grease the preheated griller with some oil, place the marinated vegetables and grill till golden on both sides. Transfer them onto a plate.
  4. Take mayonnaise in another bowl. Add sriracha sauce and mix well.
  5. Spread some mayonnaise-sriracha mixture on 4 toasted bread slices. Put some iceberg lettuce and grilled vegetables on top and cover with remaining bread slices.
  6. Halve each sandwich and serve immediately.
