Grilled Fish Crispy Noodles Salad

Marinated fish grilled, mixed with fried noodles, cabbage, carrot and some aromatics to make a delightful salad. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 basa fish fillet
  • 1 cup fried noodles
  • ½ medium red cabbage, shredded
  • 1 medium carrot, peeled and grated
  • 1 cup chopped spring onion greens 
  • Salt to taste
  • 1 teaspoon black pepper powder
  • 2 tablespoons sesame oil (til oil)
  • 1 tablespoon minced garlic 
  • 1 tablespoon soy sauce
  • 1½ tablespoons sweet chilli sauce
  • 1 teaspoon vinegar
  • 1 tablespoon toasted Sesame seeds (til) + for garnishing

Method

  1. Cut fish fillet into halves and place on a plate. Add salt, pepper powder, ½ tablespoon sesame oil and ½ tablespoon minced garlic. Rub well on both sides and set aside to marinate for 5 minutes.
  2. Heat 1 tablespoon sesame oil in a non-stick grill pan. Place marinated fish on it and grill till evenly done from both sides.
  3. To make dressing, combine remaining garlic, remaining sesame oil, salt, soy sauce, chilli sauce, vinegar and pepper powder in a small jar. Cover and shake well.
  4. Combine cabbage, carrot, spring onion greens and sesame seeds in a bowl. Cut grilled fish into small pieces and add. Toss well.
  5. Add dressing and mix gently. Crush noodles and add. Toss to mix.

    Serve immediately garnished with sesame seeds.
