Ingredients 

  • 4-5 large carrots
  • 1/2 cup raisins
  • 6-8 walnut kernels, crushed
  • 2 tablespoons lemon juice
  • 1/4 teaspoon black salt (kala namak)
  • Salt to taste
  • 1 green chilli,chopped
  • 1/4 teaspoon crushed black peppercorns 
  • 1 tablespoon honey
  • 6-8 fresh mint leaves

Method

  1. Thickly grate carrots.
  2. Wash raisins, drain and squeeze out the excess water and add to the grated carrots.
  3. Add walnuts and mix.
  4. Combine lemon juice, black salt, salt, green chilli, crushed peppercorns, honey.
  5. Add a few mint leaves broken with hand.
  6. Just before serving add the dressing to the grated carrots and toss.
  7. Serve garnished with the remaining mint leaves.
