Ingredients list for Egg Pulusu

  • 6 Eggs boiled and peeled
  • 5 tablespoons Curry Leaves
  • 1/2 teaspoon Turmeric powder
  • a pinch Fenugreek seeds (methi dana)
  • 1/4 teaspoon Mustard seeds
  • 1 to taste Dried red chillies broken
  • 10-12 Curry leaves
  • 2 medium Onions chopped
  • 1 tablespoon Ginger-garlic paste
  • 1 tablespoon Coriander powder
  • 1 teaspoon Cumin powder
  • 2 teaspoons Red chilli powder
  • 1 tablespoon Tamarind pulp
  • to taste Salt

Method

  1. Heat 4 tbsps oil in a deep non stick pan.
    Add ¼ tsp turmeric powder and eggs and sauté, rotating the pan, for 1-2 minutes.
    Once the eggs are well coloured, drain and place them in a bowl.
  2. Add 1 tbsp oil to the same pan.
    Add methi dana, mustard seeds, red chilli, curry leaves and onions and sauté till lightly browned.
  3. Dilute ginger-garlic paste with 1 tbsp water and add to the pan and mix well.
    Add the remaining turmeric powder, coriander powder, cumin powder
  4. and red chilli powder and sauté for 1 minute.
    Add ½ cup water and mix.
    Add tamarind pulp and salt and mix well.
  5. Add eggs and cook for 1-2 minutes or till the eggs are heated through.
    Serve hot.
