You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Egg Masala Pav - SK Khazana Recipe

  • Eggs boiled 4

  • Pavs 2

  • Oil 2 tablespoons

  • Butter 1 tablespoon

  • Onoins finely chopped + to serve 2 medium

  • Ginger-garlic paste 1 tablespoon

  • Tomatoes finely chopped + to serve 2 medium

  • Salt to taste

  • Red chilli powder 1/2 teaspoon

  • Red chilli paste 2 tablespoons

  • Potato boiled, peeled and mashed 1 medium

  • Green capsicum chopped 1 small

  • Fresh coriander leaves chopped 1 tablespoon

  • Pav bhaji masala 1 tablespoon

Method

Step 1

Cut 2 pavs into small pieces.

Step 2

Heat oil and butter in a deep non-stick wok, add onions and ginger-garlic paste, mix and sauté till onions turn translucent.

Step 3

Add tomatoes and mix well. Add salt, mix and sauté till tomatoes soften. Add red chilli powder and red chilli paste, mix and sauté till oil separates.

Step 4

Add potato, capsicum and coriander leaves and mix. Add pav bhaji masala and mix well. Add ½ cup water, mix well and cook for 2-3 minutes.

Step 5

Grate 3 boiled eggs into the pan, mix well. Add ½ cup water and mix well. Add pav pieces, mix well and cook for a minute.

Step 6

Transfer egg masala pav onto a serving plate. Grate the remaining egg over it, garnish with coriander leaves and serve hot with tomato and onion salad and a lemon slice.
