Drumstick Fry

Crispy drumstick fry coated with a spiced chana dal-rice paste and shallow-fried to golden perfection. A unique and flavorful side, garnished with fresh coriander. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 2 drumsticks
  • 50 grams split Bengal gram (chana dal)
  • ½ cup raw rice
  • 2 green chillies
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • ½ teaspoon dry mango powder (amchur)
  • Salt to taste
  • 4 tablespoons oil
  • Coriander leaves for garnish

Method

  1. Soak the Channa dal and rice for 10 minutes. Cut the drumsticks into 2" lengths and boil till tender.
  2. Strain the water and keep the boiled drum sticks aside. Grind the chana dal, rice, green chilli, cumin powder, coriander powder, dry mango powder and salt together and make a thick paste.
  3. Mix the paste over the drumsticks and mix well. See that the paste is properly spread over each drum stick piece. Heat oil in a no stick pan. Shallow fry the drumsticks for a few minutes. When becomes light brown remove the drum sticks from the pan and put in a serving plate, garnish with coriander leaves and serve hot.
