Desi Onion Rings

Ingredients 

  • 4 large onions
  • 1 cup gram flour
  • 2 tablespoons rice flour
  • 1 tablespoon coriander powder
  • ½ teaspoon cumin powder
  • ½ teaspoon red chilli powder
  • ¼ teaspoon turmeric powder
  • ¼ teaspoon chaat masala
  • Salt to taste
  • 1 pinch of baking soda
  • Oil to deep fry
  • Refined flour for coating
  • Vada pav chutney to serve

Method

  1. Peel onions and cut into thick rings, separate the layers, and keep the rings in ice water.
  2. Take gram flour in a bowl, add rice flour, coriander powder, cumin powder, red chilli powder, turmeric, chaat masala powder, salt, baking soda and sufficient water and whisk well to make a thick and smooth batter.
  3. Heat sufficient oil in a kadai.
  4. Dry soaked onion rings on an absorbent paper.
  5. Spread refined flour on a plate, coat the onion rings with it, and keep them on a plate. Dip the onion rings in the gram flour batter, slide into hot oil and deep-fry till golden and crisp. Drain on absorbent paper.
  6. Arrange them in a serving basket and serve hot with dry vada pav chutney.
