Ingredients
- 4 large onions
- 1 cup gram flour
- 2 tablespoons rice flour
- 1 tablespoon coriander powder
- ½ teaspoon cumin powder
- ½ teaspoon red chilli powder
- ¼ teaspoon turmeric powder
- ¼ teaspoon chaat masala
- Salt to taste
- 1 pinch of baking soda
- Oil to deep fry
- Refined flour for coating
- Vada pav chutney to serve
Method
- Peel onions and cut into thick rings, separate the layers, and keep the rings in ice water.
- Take gram flour in a bowl, add rice flour, coriander powder, cumin powder, red chilli powder, turmeric, chaat masala powder, salt, baking soda and sufficient water and whisk well to make a thick and smooth batter.
- Heat sufficient oil in a kadai.
- Dry soaked onion rings on an absorbent paper.
- Spread refined flour on a plate, coat the onion rings with it, and keep them on a plate. Dip the onion rings in the gram flour batter, slide into hot oil and deep-fry till golden and crisp. Drain on absorbent paper.
- Arrange them in a serving basket and serve hot with dry vada pav chutney.
