Desi Baked Pasta

Desi-style baked lasagna layered with spiced soya masala, white and tomato sauces, and gooey mozzarella cheese. This is a Sanjeev Kapoor exclusive recipe.

Ingredients

  • 8 lasagne sheets
  • 2 tablespoons oil
  • 2 green chillies chopped
  • 1 tablespoon finely chopped garlic 
  • 1 medium onion, finely chopped
  • 1 medium tomato,finely chopped
  • 1 cup soya granules, soaked
  • 2 tablespoons finely chopped carrots 
  • 1/4 teaspoon turmeric powder
  • Salt to taste
  • 2 teaspoons garam masala powder
  • 1/4 cup green peas, boiled
  • 2 tablespoons chopped fresh coriander leaves 
  • White sauce as required
  • Tomato sauce as required
  • 8 tablespoons grated mozzarella cheese 

Method

  1. Heat oil in a non-stick pan. Add green chillies and garlic, mix and sauté well.
  2. Add onion and tomato, mix and cook till tomatoes soften. Add soya granules and mix well.
  3. Add carrots and turmeric powder and mix well. Add salt and garam masala powder and mix.
  4. Add green peas and 1 tablespoon coriander leaves, mix and cook for 2 minutes. Remove from heat and set aside.
  5. Preheat oven to 180º C.
  6. Spread a ladleful of white sauce in a glass baking dish. Top with 2 lasagne sheets, spread some more white sauce, tomato sauce and generous portion of cooked mixture. Sprinkle 2 tablespoons cheese and repeat these layers till all the lasagna sheets, white sauce, cooked mixture and mozzarella cheese are used up.
  7. Sprinkle remaining coriander leaves, put the dish in the preheated oven and bake till the cheese melts.
  8. Serve hot.
