Ingredients list for Dakshin Squares
- 4 Brown bread slices
- 250 grams Cottage cheese
- 1 medium Onion finely chopped
- 1 medium Tomato finely chopped
- 2 teaspoons Rasam powder
- 2 Green chillies finely chopped
- to taste Salt
- to taste Crushed black peppercorns
- 8-10 Curry leaves
- 2 teaspoons Semolina (rawa/suji)
- 2 teaspoons Mustard seeds
- as required Oil
Method
- Crumble cottage cheese and place in a bowl. Add onion, tomato, rasam powder, chillies, salt and crushed peppercorns.
- Roughly chop curry leaves and add and mix well.
- Toast bread slices in a toaster till evenly done.
- Add semolina to cottage cheese mixture and mix well.
- Place toasted bread slices on a worktop. Spread cottage cheese mixture evenly on top and press. Sprinkle ½ teaspoon mustard seeds on each slice and press lightly.
- Heat 1 teaspoon oil in a non-stick pan. Place the prepared bread slices on it, mixture side down, and cook till it turns golden. Flip and cook till the other side turns golden.
- Discard the edges and cut into squares. Serve immediately.
