Chilli Oyster Noodles

A fiery stir-fry of noodles, juicy chicken, and vibrant veggies tossed in oyster-soy sauce and garlic-chilli heat, garnished with fresh spring onions. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 1/2 cups boiled noodles 
  • 2 dried red chillies
  • 2-3 fresh red chillies, chopped
  • 1 1/2 tablespoons oyster sauce
  • 3 tablespoons oil
  • 1 tablespoon chopped garlic 
  • 1/2 tablespoon chopped ginger
  • 2-3 spring onion bulbs, chopped
  • 7-8 button mushrooms, quartered
  • 1/4 cup green capsicum, cut into triangles
  • 1/4 cup red capsicum, cut into triangles
  • 10-12 broccoli florets, blanched
  • 1 medium carrot,peeled, sliced into roundel, halved and blanched
  • 250 grams noneless chicken breasts, cut into strips
  • Salt to taste
  • Crushed black peppercorns to taste
  • 1/2 tablespoon soy sauce
  • Sliced spring onion greens to garnish

Method

  1. Heat 2 tbsps oil in a non-stick pan, add dried red chillies, garlic and ginger, mix and saute for 2 minutes. Add fresh red chillies and spring onion bulbs, mix and sauté for 2 minutes.
  2. Add mushrooms, green capsicum, red capsicum, broccoli and carrots, mix and sauté for 1-2 minutes.
  3. Make a well in the center and add remaining oil, chicken, salt and crushed black peppercorns, mix well and cook on high heat for 3-4 minutes.
  4. Add noodles, oyster sauce and soy sauce, mix well and cook for 2-3 minutes.
  5. Transfer into a serving bowl, garnish with spring onion greens and serve hot.
