Ingredients
- 1 1/2 cups boiled noodles
- 2 dried red chillies
- 2-3 fresh red chillies, chopped
- 1 1/2 tablespoons oyster sauce
- 3 tablespoons oil
- 1 tablespoon chopped garlic
- 1/2 tablespoon chopped ginger
- 2-3 spring onion bulbs, chopped
- 7-8 button mushrooms, quartered
- 1/4 cup green capsicum, cut into triangles
- 1/4 cup red capsicum, cut into triangles
- 10-12 broccoli florets, blanched
- 1 medium carrot,peeled, sliced into roundel, halved and blanched
- 250 grams noneless chicken breasts, cut into strips
- Salt to taste
- Crushed black peppercorns to taste
- 1/2 tablespoon soy sauce
- Sliced spring onion greens to garnish
Method
- Heat 2 tbsps oil in a non-stick pan, add dried red chillies, garlic and ginger, mix and saute for 2 minutes. Add fresh red chillies and spring onion bulbs, mix and sauté for 2 minutes.
- Add mushrooms, green capsicum, red capsicum, broccoli and carrots, mix and sauté for 1-2 minutes.
- Make a well in the center and add remaining oil, chicken, salt and crushed black peppercorns, mix well and cook on high heat for 3-4 minutes.
- Add noodles, oyster sauce and soy sauce, mix well and cook for 2-3 minutes.
- Transfer into a serving bowl, garnish with spring onion greens and serve hot.
