By Sanjeev Kapoor 18 Feb 2017 in Recipes Course New Update Main Ingredients Boneless chicken, Prawns (kolambi/jhinga) Cuisine Fusion Course Rice Prep Time 26-30 minutes Cook time 21-25 minutes Serve 4 Taste Mild Level of Cooking Easy Others Non Veg Ingredients list for Chicken and Prawn Rice with Peppers 250 grams Boneless chicken cut into 1 inch pieces 8-10 medium Prawns (kolambi/jhinga) shelled, deveined 1½ cups Rice soaked for 30 minutes, drained 1 medium Yellow capsicum diced 1 medium Green capsicum diced 1 medium Red capsicum diced 1 tablespoon Butter ½ tablespoon Oil 1 tablespoon Garlic chopped 1 medium Onion finely chopped 1 medium Tomato blanched, peeled, finely chopped to taste Salt 1 teaspoon Paprika 6-8 florets Broccoli 3-4 cups Chicken stock Method Heat butter and oil in a deep non-stick pan. Add garlic and sauté for 30 seconds. Add onion and sauté till translucent. Add tomato and sauté for 1 minute. Add salt and paprika and mix well. Add chicken, mix and cook for 1 minute. Add rice and mix well. Add yellow capsicum, green capsicum, red capsicum, broccoli and chicken stock, mix and bring to a boil. Add prawns, mix and cover and cook till rice is done.
