Ingredients list for Chicken and Prawn Rice with Peppers
- 250 grams Boneless chicken cut into 1 inch pieces
- 8-10 medium Prawns (kolambi/jhinga) shelled, deveined
- 1½ cups Rice soaked for 30 minutes, drained
- 1 medium Yellow capsicum diced
- 1 medium Green capsicum diced
- 1 medium Red capsicum diced
- 1 tablespoon Butter
- ½ tablespoon Oil
- 1 tablespoon Garlic chopped
- 1 medium Onion finely chopped
- 1 medium Tomato blanched, peeled, finely chopped
- to taste Salt
- 1 teaspoon Paprika
- 6-8 florets Broccoli
- 3-4 cups Chicken stock
Method
- Heat butter and oil in a deep non-stick pan. Add garlic and sauté for 30 seconds.
- Add onion and sauté till translucent. Add tomato and sauté for 1 minute. Add salt and paprika and mix well.
- Add chicken, mix and cook for 1 minute. Add rice and mix well. Add yellow capsicum, green capsicum, red capsicum, broccoli and chicken stock, mix and bring to a boil.
- Add prawns, mix and cover and cook till rice is done.
- Serve hot.
