Chicken Tikka Salad-Cook Smart Chicken tikka mixed with a unusual dressing is simply delicious This recipe is from FoodFood TV channel By Sanjeev Kapoor 21 Aug 2018 in Recipes Course New Update Main Ingredients Boneless chicken, Thick yogurt Cuisine Fusion Course Salads Prep Time 4-5 hour Cook time 16-20 minutes Serve 4 Taste Tangy Level of Cooking Easy Others Non Veg Ingredients list for Chicken Tikka Salad-Cook Smart 500 grams Boneless chicken cut into small pieces 4 tablespoons Thick yogurt 1 1/2 teaspoons Red chilli paste 2 teaspoons Ginger-garlic paste 20-25 Almonds blanched and peeled to taste Salt 1/2 teaspoon Garam masala powder 1/2 tablespoon Lemon juice for grilli Oil 1 Spring onion bulb 6-7 Fresh basil leaves 15-20 Fresh mint leaves 4-5 Iceberg lettuce leaves 6-7 Lollo rosso lettuce leaves Dressing 1/3 cup Tomato juice 2 teaspoons Mustard paste 1 teaspoon Balsamic vinegar to taste Salt 1 tablespoon Olive oil to taste Black peppercorns freshly crushed Method Take yogurt in a bowl. Add red chilli paste and ginger-garlic paste. Toast almonds in a non-stick grill pan till lightly browned. Add salt, garam masala powder and lemon juice to the yogurt and mix well. Add chicken pieces and mix well. Set aside to marinate for 4 hours. Transfer toasted almonds into another bowl and cool down to room temperature. Heat some oil in the same non-stick grill pan. Place marinated chicken pieces on it and grill, turning sides, till the chicken is fully cooked. To make salad, diagonally slice spring onion bulb and place in a bowl. Roughly chop basil leaves and add. Add mint leaves. Tear Iceberg and lollo rosso lettuce leaves and add. To make dressing, take tomato juice in a bowl. Add mustard paste, Balsamic vinegar, salt, olive oil and freshly crushed peppercorns and mix well. Remove chicken tikka from the pan and cut into smaller pieces. Add some of the dressing and half the chicken pieces to the salad and toss well. Transfer the salad onto a serving plate, place the remaining chicken pieces top and drizzle some more dressing on top.
