Ingredients list for Chicken Pulao

  • 400 grams Chicken
  • 1 1/2 cups Rice soaked in warm water for 10-15 minutes
  • 1 tablespoon Ghee
  • 2 medium Onions
  • 2 Bay leaves
  • 1 inch stick Cinnamon
  • 8-10 Green cardamom
  • 4-5 Cloves
  • 20-25 Black peppercorns
  • 1 teaspoon Cumin seeds
  • 1 tablespoon Ginger-garlic paste
  • 1 tablespoon Red chilli powder
  • 1/2 cup Yogurt
  • 3 cups Chicken stock
  • to taste Salt

Method

  1. Heat ghee in a handi. Finely slice onions. Add bay leaves, cinnamon, green cardamoms, cloves, black peppercorns and cumin seeds to the handi and sauté till fragrant. Add onions and sauté.
  2. Cut chicken breasts into diagonal pieces.When onions turn light brown, add chicken pieces and ginger-garlic paste and mix. Sauté for 4-5 minutes. Add red chilli powder and yogurt and mix.
  3. Add chicken stock and mix.Add rice and salt and mix well. Cover and cook for 6-8 minutes or till both rice and chicken are done.Transfer into a serving bowl and serve hot.
