Ingredients list for Chicken Pita Pockets
- 2 Boneless Chicken cut into thick strips
- 2 Pita Bread
- 2 Cloves
- 1 inch piece Cinnamon
- 1/2 teaspoon Nutmeg powder
- 3/4 teaspoon Lemon juice
- 3 teaspoons Olive oil
- 2 cloves Garlic chopped
- to taste Salt
- 1 Green chilli chopped
- 1 teaspoon Coriander seeds crushed
- 1 teaspoon Crushed black peppercorns
- 3 tablespoons Mayonnaise
- 1 cup Lettuce leaves shredded
Method
- Pound cloves, cinnamon and nutmeg powder to a fine powder. Mix lemon juice, one teaspoon olive oil, garlic, salt, green chilli, crushed coriander seeds, crushed peppercorns and the spice powder in a bowl.
- Rub this mixture on the chicken strips and marinate them for five to six hours, preferably in the refrigerator.Heat remaining oil in a non-stick grill pan. Add the chicken and cook, turning sides, till cooked evenly and soft on both sides.
- Combine the mayonnaise and shredded lettuce in a bowl. Cut the pita breads into halves and open out the pockets. Put the mayonnaise-lettuce mixture and grilled chicken into each pocket. Serve immediately.
