Chicken Mayo Roll

Ingredients list for Chicken Mayo Roll

  • 1 Chicken breast , grilled and shredded
  • 3-4 tablespoons Mayonnaise
  • 8 Spring roll sheets
  • 1/2 medium Onion , finely chopped
  • 1/4 medium Purple cabbage , finely chopped
  • 1/4 medium Green capsicum , finely chopped
  • 1 small Carrot , peeled and finely chopped
  • 1/4 medium Red capsicum , finely chopped
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • to taste Crushed black peppercorns
  • to taste Salt
  • 1/2 cup Processed cheese , grated
  • for deep-frying Oil
  • as required Cornflour/ corn starch slurry
  • to serve Sweet chilli sauce

Method

  1. Take shredded chicken in a bowl, add onion, purple cabbage, green capsicum, carrot, red capsicum, garlic powder, onion powder, crushed peppercorns, salt, cheese and mayonnaise and mix well.
  2. Heat sufficient oil in a kadai.
  3. To make each roll, put some chicken mixture on one end of each spring roll sheet, apply some slurry on the edges, fold two vertical opposite sides, roll till the end. Seal applying some slurry on the end. Keep them on a plate.
  4. Slide in the rolls into hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.
  5. Arrange them on a serving plate and serve hot with sweet-chilli sauce.
