Chana Jor Garam Tikki

Ingredients 

  • 2 cups chana chor garam
  • 4 medium potatoes, boiled and peeled
  • 2 teaspoons coriander powder
  • ½ teaspoon red chilli powder
  • ¼ teaspoon turmeric powder
  • 2 green chillies, chopped
  • 2 tablespoons fresh coriander leaves, chopped
  • Salt to taste
  • 1 cup fresh bread crumbs

Stuffing

  • ½ cup cottage cheese (paneer) grated
  • 2 tablespoons processed cheese grated
  • A pinch of salt
  • 1 green chilli, chopped
  • 1 tablespoon fresh coriander leaves, chopped
  • Oil to deep fry + for greasing
  • Corn flour-refined flour slurry as required 
  • Microgreens for garnish 
  • Green chutney to serve 

Method

  1. Grate potatoes in a large bowl, add coriander powder, red chilli powder, turmeric powder, green chillies, coriander leaves, salt and bread crumbs and mix well.
  2. For the stuffing, take cottage cheese in another bowl, add processed cheese, green chilli and coriander leaves and mix well.
  3. Take chana jor garam in a zip lock bag and coarsely crush using a rolling pin. Transfer on a plate.
    Grease your palms with oil take a portion of the potato mixture and make a cavity in the centre and stuff with a portion of the stuffing. Shape into a tikki.
  4. Dip each tikki in the slurry and roll on crushed chana jor garam.
  5. Heat sufficient oil in a kadai slide in the tikkis and deep fry till golden brown and crisp. Drain on an absorbent and transfer onto a serving plate.
  6. Garnish with micro greens and serve hot with green chutney.
