Ingredients
- 2 cups chana chor garam
- 4 medium potatoes, boiled and peeled
- 2 teaspoons coriander powder
- ½ teaspoon red chilli powder
- ¼ teaspoon turmeric powder
- 2 green chillies, chopped
- 2 tablespoons fresh coriander leaves, chopped
- Salt to taste
- 1 cup fresh bread crumbs
Stuffing
- ½ cup cottage cheese (paneer) grated
- 2 tablespoons processed cheese grated
- A pinch of salt
- 1 green chilli, chopped
- 1 tablespoon fresh coriander leaves, chopped
- Oil to deep fry + for greasing
- Corn flour-refined flour slurry as required
- Microgreens for garnish
- Green chutney to serve
Method
- Grate potatoes in a large bowl, add coriander powder, red chilli powder, turmeric powder, green chillies, coriander leaves, salt and bread crumbs and mix well.
- For the stuffing, take cottage cheese in another bowl, add processed cheese, green chilli and coriander leaves and mix well.
- Take chana jor garam in a zip lock bag and coarsely crush using a rolling pin. Transfer on a plate.
Grease your palms with oil take a portion of the potato mixture and make a cavity in the centre and stuff with a portion of the stuffing. Shape into a tikki. - Dip each tikki in the slurry and roll on crushed chana jor garam.
- Heat sufficient oil in a kadai slide in the tikkis and deep fry till golden brown and crisp. Drain on an absorbent and transfer onto a serving plate.
- Garnish with micro greens and serve hot with green chutney.
