Chakvatachi Bhaji

A traditional leafy vegetable preparation cooked in buttermilk based gravy. Serve this with hot bhakris. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 bunch chakvat
  • 4 green chillies,stemmed
  • A few fresh coriander leaves
  • 1/4 cup split Bengal gram (chana dal)
  • 1/4 cup peanuts
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1/4 teaspoon asafoetida
  • A pinch of sugar
  • Salt to taste
  • 3 tablespoons gram flour (besan)
  • 1/2 cup buttermilk

Method

  1. Clean, wash and shred chakvat finely. Remove stems, wash and chop green chillies finely. Clean, wash and chop coriander leaves finely. Wash and soak chana dal in half a cup of water for an hour. Drain. Roast peanuts and then crush roughly.
  2. Heat oil, add cumin seeds, when slightly brown, add asafoetida, green chillies and chakvat. Stir for a while.
  3. Add chana dal, sugar and salt. Mix well and cook till chana dal is soft but firm.
  4. Mix besan and buttermilk till smooth and then add this to the pan. Further cook for five to six minutes stirring well.
  5. Serve hot garnished with chopped coriander leaves.
