Ingredients list for Carrot and Oatmeal Cookies
- 1 cup Carrots grated
- 1 cup Oats
- ¾ cup Butter
- ½ cup Castor sugar (caster sugar)
- ½ cup brown sugar/jaggery
- 1 Egg
- 1 cup Refined flour (maida)
- ½ teaspoon Baking powder
- ½ teaspoon Cinnamon powder
- ½ teaspoon Baking soda
- ½ teaspoon Salt
- ¼ cup Raisins
- 1 teaspoon Vanilla essence
Method
- Preheat oven to 180° C. Line a baking tray with a silicon mat.
- Cream together butter, castor sugar and brown sugar in a bowl with an electric beater. Break in the egg and whisk.
- Sieve flour, baking powder, cinnamon powder, baking soda and salt into another bowl. Add oats, raisins and carrot and mix. Add vanilla essence and whisk well.
- Add this mixture to the egg mixture and whisk well.
- Divide the mixture into equal portions, shape them into balls, lightly flatten and place on the lined baking tray.
- Place the baking tray in preheated oven and bake for 15 minutes. Remove from oven and cool.
- Serve.
