By Sanjeev Kapoor 24 Dec 2014 in Recipes Veg New Update Main Ingredients Brown Basmati rice, Shelled green peas Cuisine Indian Course Rice Prep Time 1.30-2 hour Cook time 31-40 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients list for Brown Rice Vegetables 2 cups Brown Basmati rice 1/2 cup Shelled green peas 2 medium Carrots cut into small cubes 10-12 French beans chopped 1/4 medium Cauliflower separated into florets 6-7 Button mushrooms halved 100 grams Silken beancurd (tofu) cut into ½ inch cubes 2 tablespoons Oil 1 Bay leaf 2-3 Clove 1 teaspoon Cumin seeds 2 inch sticks Cinnamon 2 medium Onion sliced 1/4 teaspoon Turmeric powder to taste Salt 4 Green chilli slit 1/2 teaspoon Garam masala powder Method Soak the brown rice in four or five cups of water for one hour. Drain and set aside. Heat the oil in a pressure cooker; add the bay leaf, cloves, cumin seeds and cinnamon. When they begin to change colour, add the onions and sauté till light brown. Add the drained rice, turmeric powder and salt and sauté for one or two minutes. Add five cups of water and bring to a boil. Seal the cooker with the lid and cook over medium heat till the pressure is released four times (four whistles). Remove the lid when pressure reduces. Stir in the green peas, carrots, French beans, cauliflower, mushrooms, green chillies and garam masala powder. Cover again and cook over medium heat till the pressure is released twice (two whistles).
