Ingredients list for Breaded Fish with Parsley Butter
- 2 medium Pomfrets heads removed
- 4-5 sprigs Fresh parsley
- ½ cup Butter
- to taste Salt
- 2 teaspoons Red chilli powder
- ¼ teaspoon Turmeric powder
- to taste Crushed black peppercorns
- 2 teaspoons Mustard paste
- 2 teaspoons Garlic
- 1 teaspoon Lemon juice
- 1 Egg
- 1 cup Bread crumbs
- 3 tablespoons Parmesan cheese powder
- for shallow frying Oil
- for dusting Cornflour/ corn starch
Method
- Take pomfrets on a plate. Add salt, red chilli powder, turmeric powder, crushed peppercorns, mustard paste, chopped garlic and lemon juice and rub well on both the sides. Set aside to marinate for 5-10 minutes.
- To make parsley butter, finely chop parsley sprigs and add to the butter alongwith crushed peppercorns and mix well. Set aside.
- Break egg into a deep plate and beat well.
- Spread breadcrumbs on a plate. Add Parmesan cheese powder and mix well.
- Heat some oil in a non-stick pan.
- Dust marinated fish with cornflour, dip in beaten eggs and coat well in the breadcrumb-cheese mixture.
- Place the fish in the pan and shallow-fry till golden from both the sides and the fish is fully cooked.
- Transfer the fish on a serving dish. Top with parsley butter and serve hot.
