History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Bread Upma-SK Khazana Recipe

  • Brown bread slices 5-6

  • Oil 1 tablespoon

  • Mustard seeds 1 teaspoon

  • Cumin seeds 1/2 teaspoon

  • Curry leaves 2 sprigs

  • Medium onion finely chopped 1

  • Green chilli chopped 1

  • Green chilli slit 1

  • Medium potato peeled and cut into cubes 1

  • Salt to taste

  • Turmeric powder 1/4 teaspoon

  • Lemon juice 1 teaspoon

  • Fresh coriander leaves chopped 1 teaspoon

  • Fresh coriander sprig for garnish

Method

Step 1

Heat oil in a non-stick pan. Add mustard seeds and sauté till the seeds splutter. Add cumin seeds and curry leaves and sauté till leaves crackle.

Step 2

Add onions and sauté till it turns translucent. Add chopped and slit green chillies and potatoes and mix.

Step 3

Add some water, salt and turmeric powder, mix well, cover and cook till the potatoes are done.

Step 4

Cut bread slices into small cubes, add to the pan and mix well. Add some water, mix and let it get heated through.

Step 5

Switch off heat, add lemon juice and coriander leaves and mix well.

Step 6

Garnish with coriander sprig and serve hot.
